Uncle Bob’s Bistro Chicken is a flavorful, tender baked chicken dish marinated with herbs, garlic, and a touch of lemon, reminiscent of classic bistro-style cooking. Perfect for a hearty dinner served with vegetables or potatoes.
Ingredients
- 4 boneless, skinless chicken breasts
 - 3 tablespoons olive oil
 - 3 cloves garlic, minced
 - 1 teaspoon dried thyme
 - 1 teaspoon dried rosemary
 - 1 teaspoon paprika
 - 1 tablespoon lemon juice
 - Salt and pepper, to taste
 - Fresh parsley, chopped, for garnish
 
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a baking dish.
 - In a small bowl, whisk together olive oil, garlic, thyme, rosemary, paprika, lemon juice, salt, and pepper.
 - Place chicken breasts in the baking dish and brush both sides with the marinade. Let sit for 10–15 minutes if time allows.
 - Bake for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
 - Remove from oven and let rest for 5 minutes before serving.
 - Garnish with fresh parsley and serve with your favorite sides, such as roasted vegetables or mashed potatoes.
 
Notes
- For extra flavor, marinate the chicken for 1–2 hours or overnight in the refrigerator.
 - Can be cooked on the stovetop in a skillet over medium heat for 6–8 minutes per side if preferred.
 - Leftovers can be stored in the fridge for up to 3 days and reheated gently.
