Description

Uncle Bob’s Bistro Chicken is a flavorful, tender baked chicken dish marinated with herbs, garlic, and a touch of lemon, reminiscent of classic bistro-style cooking. Perfect for a hearty dinner served with vegetables or potatoes.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 1 tablespoon lemon juice
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a small bowl, whisk together olive oil, garlic, thyme, rosemary, paprika, lemon juice, salt, and pepper.
  3. Place chicken breasts in the baking dish and brush both sides with the marinade. Let sit for 10–15 minutes if time allows.
  4. Bake for 25–30 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  5. Remove from oven and let rest for 5 minutes before serving.
  6. Garnish with fresh parsley and serve with your favorite sides, such as roasted vegetables or mashed potatoes.

Notes

  • For extra flavor, marinate the chicken for 1–2 hours or overnight in the refrigerator.
  • Can be cooked on the stovetop in a skillet over medium heat for 6–8 minutes per side if preferred.
