Description

Ingredients

  • 2 lbs beef chuck or stew meat, cut into chunks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 (14.5 oz) can diced tomatoes
  • 2 tablespoons tomato paste
  • 2 cups beef broth
  • 1 sprig fresh rosemary (or 1 teaspoon dried)
  • 1 teaspoon fresh thyme or dried Italian herbs
  • Salt and pepper to taste
  • 1 (15 oz) can cannellini beans (optional)
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large Dutch oven or casserole dish over medium-high heat.
  2. Season the beef with salt and pepper, then brown it in batches. Set aside.
  3. In the same pot, sauté onion, carrots, and celery until softened.
  4. Add garlic and cook for 1 minute until fragrant.
  5. Stir in tomato paste, sun-dried tomatoes, and canned diced tomatoes.
  6. Return beef to the pot and pour in beef broth. Add rosemary and thyme.
  7. Bring to a simmer, then cover and cook on low heat for 2–2.5 hours, or until beef is fork-tender.
  8. Optional: Stir in cannellini beans during the last 30 minutes of cooking.
  9. Adjust seasoning to taste and garnish with fresh parsley before serving.

  • Slow cooker method: After browning, transfer all ingredients to a slow cooker and cook on low for 6–8 hours.
  • Add potatoes or leafy greens like kale for variation.
  • Freeze leftovers in portions for up to 3 months.
