Ingredients
- 2 lbs beef chuck or stew meat, cut into chunks
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, diced
- 1/2 cup sun-dried tomatoes, chopped
- 1 (14.5 oz) can diced tomatoes
- 2 tablespoons tomato paste
- 2 cups beef broth
- 1 sprig fresh rosemary (or 1 teaspoon dried)
- 1 teaspoon fresh thyme or dried Italian herbs
- Salt and pepper to taste
- 1 (15 oz) can cannellini beans (optional)
- Fresh parsley, for garnish
Instructions
- Heat olive oil in a large Dutch oven or casserole dish over medium-high heat.
- Season the beef with salt and pepper, then brown it in batches. Set aside.
- In the same pot, sauté onion, carrots, and celery until softened.
- Add garlic and cook for 1 minute until fragrant.
- Stir in tomato paste, sun-dried tomatoes, and canned diced tomatoes.
- Return beef to the pot and pour in beef broth. Add rosemary and thyme.
- Bring to a simmer, then cover and cook on low heat for 2–2.5 hours, or until beef is fork-tender.
- Optional: Stir in cannellini beans during the last 30 minutes of cooking.
- Adjust seasoning to taste and garnish with fresh parsley before serving.

- Slow cooker method: After browning, transfer all ingredients to a slow cooker and cook on low for 6–8 hours.
- Add potatoes or leafy greens like kale for variation.
