Description
A comforting and hearty turkey soup with rice, perfect for using up leftover turkey. This soup is full of flavor and makes a wholesome meal any day of the week.
Ingredients
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 3 medium carrots, sliced
- 2 celery stalks, sliced
- 6 cups turkey or chicken broth
- 2 cups cooked turkey, shredded or chopped
- 1 cup cooked white or brown rice
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and pepper to taste
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion, garlic, carrots, and celery. Sauté for 5–7 minutes until softened.
- Pour in the turkey or chicken broth and bring to a boil.
- Reduce heat and stir in cooked turkey, rice, thyme, and rosemary.
- Simmer for 15–20 minutes to let flavors meld together.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving, if desired.
Notes
- You can use leftover turkey from a holiday meal.
- Substitute rice with noodles or barley if preferred.
