Description

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 6 cups turkey or chicken broth
  • 2 cups cooked turkey, shredded or chopped
  • 1 cup cooked white or brown rice
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, carrots, and celery. Sauté for 5–7 minutes until softened.
  3. Pour in the turkey or chicken broth and bring to a boil.
  4. Reduce heat and stir in cooked turkey, rice, thyme, and rosemary.
  5. Simmer for 15–20 minutes to let flavors meld together.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh parsley before serving, if desired.
