Description

A lighter twist on the classic comfort dish — savory ground turkey cooked with mixed vegetables and seasoned with Worcestershire sauce, all topped with creamy mashed potatoes and baked until golden and bubbling. This easy, wholesome turkey shepherd’s pie offers a balanced, family-friendly meal perfect for weeknight dinners.

Ingredients

Main Ingredients

  • 1 lb ground turkey
  • 1 cup frozen mixed vegetables (carrots, peas, green beans, corn)
  • 1 cup corn kernels
  • 2 cups mashed potatoes

Seasonings & Oils

  • 1 tbsp olive oil
  • 1 tsp Worcestershire sauce
  • Salt & pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400 °F (200 °C) to ensure it’s hot and ready for baking the shepherd’s pie.
  2. Sauté Turkey: Heat the olive oil in a large skillet over medium heat. Add the ground turkey, season with salt and pepper, and cook until browned, breaking it up as it cooks. Stir in Worcestershire sauce for added depth of flavor.
  3. Add Vegetables: Mix in the frozen mixed vegetables and corn kernels with the cooked turkey. Cook for a few more minutes until the vegetables are heated through and well combined.
  4. Assemble Pie: Transfer the turkey and vegetable mixture evenly into a baking dish. Carefully spread the mashed potatoes on top to cover the filling completely, smoothing the surface with a spatula.
  5. Bake: Place the baking dish in the preheated oven and bake for 20–25 minutes, or until the mashed potato topping is lightly browned and golden on top.
  6. Serve: Remove from the oven and let cool slightly before serving. Optionally, sprinkle Parmesan cheese on top before serving for extra flavor.

Notes

  • Add a sprinkle of Parmesan cheese on top before or after baking for enhanced flavor.
  • You can use fresh vegetables instead of frozen if preferred, just adjust cooking times accordingly.
  • For extra creaminess, stir a little butter or cream into the mashed potatoes before spreading.
  • This dish reheats well and can be stored in the refrigerator for up to 3 days.
