Description

A wholesome and cozy fall-inspired chili made with lean ground turkey, pumpkin puree, beans, and warming spices. This protein-packed dish is rich, flavorful, and perfect for a healthy comfort meal during cooler months.

Ingredients

Main Ingredients

  • 1 lb ground turkey
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 can (15 oz) pumpkin puree
  • 1 can (14 oz) diced tomatoes
  • 1 can black beans, drained
  • 2 cups chicken broth

Spices & Seasonings

  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper, to taste

Instructions

  1. Brown the Turkey: In a large pot over medium heat, add the ground turkey, diced onion, and minced garlic. Cook, stirring frequently, until the turkey is browned and the onion is softened, about 5-7 minutes.
  2. Add Remaining Ingredients: Stir in the pumpkin puree, diced tomatoes, drained black beans, chicken broth, chili powder, cumin, paprika, salt, and pepper until well combined.
  3. Simmer the Chili: Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for 20 to 25 minutes. This allows the flavors to meld and the chili to thicken slightly.
  4. Adjust Seasoning and Serve: Taste the chili and adjust salt and pepper as desired. Serve the chili warm with optional toppings like sour cream, shredded cheese, or fresh cilantro.

Notes

  • For extra vegetables and color, add corn kernels or diced bell peppers when adding the pumpkin and tomatoes.
  • Garnish with sour cream, shredded cheese, or fresh cilantro for added flavor and creaminess.
  • This chili is perfect for meal prep and tastes even better the next day.
  • If you prefer a thicker chili, let it simmer a bit longer or reduce the broth slightly.
