Description
A wholesome and cozy fall-inspired chili made with lean ground turkey, pumpkin puree, beans, and warming spices. This protein-packed dish is rich, flavorful, and perfect for a healthy comfort meal during cooler months.
Ingredients
Main Ingredients
- 1 lb ground turkey
- 1 onion, diced
- 2 garlic cloves, minced
- 1 can (15 oz) pumpkin puree
- 1 can (14 oz) diced tomatoes
- 1 can black beans, drained
- 2 cups chicken broth
Spices & Seasonings
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper, to taste
Instructions
- Brown the Turkey: In a large pot over medium heat, add the ground turkey, diced onion, and minced garlic. Cook, stirring frequently, until the turkey is browned and the onion is softened, about 5-7 minutes.
- Add Remaining Ingredients: Stir in the pumpkin puree, diced tomatoes, drained black beans, chicken broth, chili powder, cumin, paprika, salt, and pepper until well combined.
- Simmer the Chili: Bring the mixture to a boil, then reduce the heat to low and let it simmer gently for 20 to 25 minutes. This allows the flavors to meld and the chili to thicken slightly.
- Adjust Seasoning and Serve: Taste the chili and adjust salt and pepper as desired. Serve the chili warm with optional toppings like sour cream, shredded cheese, or fresh cilantro.
Notes
- For extra vegetables and color, add corn kernels or diced bell peppers when adding the pumpkin and tomatoes.
- Garnish with sour cream, shredded cheese, or fresh cilantro for added flavor and creaminess.
- This chili is perfect for meal prep and tastes even better the next day.
- If you prefer a thicker chili, let it simmer a bit longer or reduce the broth slightly.
