  • 2 cups spinach or kale


Instructions

  1. Prepare Meatballs: In a medium bowl, combine ground turkey, breadcrumbs, egg, grated Parmesan, Italian seasoning, salt, and pepper. Mix thoroughly and form the mixture into 1-inch meatballs.
  2. Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add the diced onion, sliced carrots, and diced celery. Cook, stirring occasionally, for about 5 minutes until vegetables begin to soften and the onion is translucent.
  3. Add Broth and Meatballs: Pour in the chicken broth and bring the mixture to a gentle simmer. Carefully add the turkey meatballs to the simmering broth.
  4. Simmer Meatballs: Allow the meatballs to cook in the simmering broth for 15 minutes, ensuring they are cooked through and tender.
  5. Cook Pasta: Add the small pasta to the pot and cook for an additional 8 to 10 minutes or until the pasta is al dente.
