Tray-Baked Chicken Marylands with Risoni is a one-pan meal featuring tender chicken Marylands baked alongside risoni pasta, vegetables, and a flavorful sauce. This easy and comforting dish is perfect for busy weeknights.
Ingredients
- 4 chicken Marylands (thigh and drumstick attached)
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup risoni (or orzo) pasta
- 2 cups chicken broth
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 200°C (400°F). Grease a large baking tray or roasting pan.
- Rub chicken Marylands with olive oil, smoked paprika, salt, and pepper.
- Place chicken on the tray and bake for 20 minutes.
- Meanwhile, in a bowl, combine risoni, chopped onion, garlic, and red bell pepper with a drizzle of olive oil.
- Remove the tray from the oven and pour chicken broth over the risoni mixture. Nestle the risoni mixture around the chicken.
- Return the tray to the oven and bake for an additional 20–25 minutes, until chicken is fully cooked (internal temperature 75°C / 165°F) and risoni is tender.
- Garnish with fresh parsley and serve hot.
Notes
- You can add other vegetables like zucchini or cherry tomatoes for extra color and flavor.
- For a creamier risoni, stir in a tablespoon of cream or grated cheese just before serving.
- Leftovers can be stored in the fridge for up to 2 days and reheated gently.
