Description

Tomato Basil Bruschetta is a classic Italian appetizer featuring toasted bread topped with a fresh mix of diced tomatoes, garlic, basil, and olive oil—perfect for any occasion.

Ingredients

  • 45 ripe Roma or plum tomatoes, diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon balsamic vinegar (optional)
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • 1 baguette or crusty Italian bread, sliced
  • 1 garlic clove (for rubbing on toast)
  • Olive oil for brushing the bread

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the baguette into 1/2-inch thick slices and place on a baking sheet.
  3. Brush both sides of each slice with olive oil and toast in the oven for 8–10 minutes, flipping halfway, until golden and crisp.
  4. While the bread toasts, combine diced tomatoes, chopped basil, minced garlic, olive oil, balsamic vinegar (if using), salt, and pepper in a bowl. Mix well and let it sit for 10 minutes to allow the flavors to meld.
  5. Once the bread is toasted, rub the top of each slice with a peeled garlic clove for extra flavor.
  6. Spoon the tomato basil mixture onto each toasted slice right before serving.
  7. Serve immediately while the bread is still warm and crispy.

Notes

  • Toast the bread well to prevent sogginess when topped.
  • Use fresh, ripe tomatoes for the best flavor.
  • Let the tomato mixture sit to develop richer flavor.
  • Serve immediately after assembly to preserve texture.
  • Store components separately if making ahead.
