Ingredients
- 4–5 ripe Roma or plum tomatoes, diced
- 1/4 cup fresh basil leaves, chopped
- 2 garlic cloves, minced
- 1 tablespoon balsamic vinegar (optional)
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
- 1 baguette or crusty Italian bread, sliced
- 1 garlic clove (for rubbing on toast)
- Olive oil for brushing the bread
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the baguette into 1/2-inch thick slices and place on a baking sheet.
- Brush both sides of each slice with olive oil and toast in the oven for 8–10 minutes, flipping halfway, until golden and crisp.
- While the bread toasts, combine diced tomatoes, chopped basil, minced garlic, olive oil, balsamic vinegar (if using), salt, and pepper in a bowl. Mix well and let it sit for 10 minutes to allow the flavors to meld.
- Once the bread is toasted, rub the top of each slice with a peeled garlic clove for extra flavor.
- Spoon the tomato basil mixture onto each toasted slice right before serving.
- Serve immediately while the bread is still warm and crispy.
