Tomato and Olive Chicken Sauté is a Mediterranean-inspired dish featuring tender chicken simmered with juicy tomatoes, briny olives, garlic, and herbs. It’s a one-pan meal that’s simple, hearty, and full of vibrant flavor.
Ingredients
- 4 boneless, skinless chicken thighs or breasts
- 2 tablespoons olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, undrained
- 1/2 cup pitted Kalamata or black olives, halved
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- Salt and pepper, to taste
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Season the chicken with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium heat.
- Sear chicken for 4–5 minutes per side until golden brown. Remove and set aside.
- In the same skillet, sauté onion for 2–3 minutes until softened. Add garlic and cook for 30 seconds more.
- Stir in diced tomatoes (with juice), olives, oregano, and red pepper flakes. Simmer for 2 minutes.
- Return chicken to the skillet, nestling it into the tomato mixture. Cover and simmer for 10–15 minutes or until chicken is cooked through and tender.
- Garnish with chopped parsley and serve hot with crusty bread, rice, or couscous.

- Use boneless, skinless chicken thighs for extra tenderness and flavor.
- Can be made ahead and reheated — flavors deepen over time.
- Add capers or artichoke hearts for more Mediterranean flair.
