Description

Tomato and Olive Chicken Sauté is a Mediterranean-inspired dish featuring tender chicken simmered with juicy tomatoes, briny olives, garlic, and herbs. It’s a one-pan meal that’s simple, hearty, and full of vibrant flavor.


Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1/2 cup pitted Kalamata or black olives, halved
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Season the chicken with salt and pepper on both sides.
  2. Heat olive oil in a large skillet over medium heat.
  3. Sear chicken for 4–5 minutes per side until golden brown. Remove and set aside.
  4. In the same skillet, sauté onion for 2–3 minutes until softened. Add garlic and cook for 30 seconds more.
  5. Stir in diced tomatoes (with juice), olives, oregano, and red pepper flakes. Simmer for 2 minutes.
  6. Return chicken to the skillet, nestling it into the tomato mixture. Cover and simmer for 10–15 minutes or until chicken is cooked through and tender.
  7. Garnish with chopped parsley and serve hot with crusty bread, rice, or couscous.

  • Use boneless, skinless chicken thighs for extra tenderness and flavor.
