Ingredients
- 4 boneless, skinless chicken breasts (or thighs for a juicier version)
- 3 tablespoons butter (divided)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- Salt and pepper, to taste
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 1 tablespoon Dijon mustard
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions
- Season the chicken: Season both sides of the chicken breasts with garlic powder, onion powder, paprika, dried thyme, oregano, salt, and pepper.
- Cook the chicken: In a large skillet, heat 1 tablespoon of butter and olive oil over medium heat. Add the chicken breasts and cook for 6-7 minutes on each side until golden brown and cooked through. Remove chicken from skillet and set aside.
- Make the butter sauce: In the same skillet, add the remaining 2 tablespoons of butter. Once melted, add chicken broth, heavy cream, Dijon mustard, and lemon juice. Stir to combine and simmer for 4-5 minutes until thickened.
- Thicken the sauce: Let the sauce simmer until it thickens to your liking. Adjust seasoning with salt and pepper.
- Return the chicken to the skillet: Return the cooked chicken to the skillet and spoon sauce over. Let it simmer for 2-3 minutes to meld the flavors.
- Serve: Garnish with fresh parsley and serve the skillet with your favorite side dish like rice, mashed potatoes, or crusty bread.
- Enjoy: Serve immediately and enjoy this rich, creamy Butter Chicken!
