Description

Tater Tot Casserole with Ground Beef is a comforting and hearty dish that combines seasoned ground beef, creamy vegetables, and crispy tater tots, all baked together for a satisfying meal.

Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 oz) cream of mushroom soup (or cream of chicken soup)
  • 1/2 cup milk
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup frozen peas (or mixed vegetables)
  • 1 bag (32 oz) frozen tater tots
  • 1 1/2 cups shredded cheddar cheese

Instructions

  1. Cook the ground beef over medium heat in a large skillet, breaking it up with a spoon as it cooks. Once browned and fully cooked, drain excess fat.
  2. Add chopped onion and minced garlic to the skillet and cook for 3-4 minutes until softened.
  3. Stir in the cream of mushroom soup, milk, Worcestershire sauce, and dried thyme. Season with salt and pepper to taste. Cook for 5-7 minutes until well combined and heated through.
  4. Add frozen peas (or other vegetables) to the mixture and remove the skillet from heat.
  5. Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish and spread the beef and vegetable mixture evenly in the bottom.
  6. Arrange frozen tater tots in a single layer on top of the beef mixture, covering the entire surface.
  7. Bake for 30-35 minutes, until tater tots are golden brown and crispy.
  8. Remove from oven and sprinkle shredded cheddar cheese on top. Return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
  9. Let the casserole cool for a few minutes before serving. Enjoy!

Notes

  • For a vegetarian version, replace ground beef with lentils, black beans, or a plant-based meat substitute.
  • To add heat, try adding chili flakes, hot sauce, or diced jalapeños to the beef mixture.
  • Feel free to add other vegetables like corn, green beans, or mushrooms.
  • For a creamier version, swap the cream of mushroom soup for a homemade creamy sauce or add sour cream to the mixture.
