Description
These Sweet and Spicy Korean Stir Fry Noodles are bursting with flavors from gochujang, garlic, and soy sauce. Perfectly chewy noodles are tossed with vegetables and a savory-sweet sauce for a quick and satisfying meal.
Ingredients
- 8 oz Korean wheat noodles or udon noodles
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 3 cloves garlic, minced
- 1 small onion, sliced
- 1 cup sliced bell peppers (red, yellow, or green)
- 1 cup shredded cabbage or bok choy
- 2 green onions, chopped
- 1 tablespoon soy sauce
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon honey or brown sugar
- 1 teaspoon rice vinegar
- 1 teaspoon toasted sesame seeds (optional)
Instructions
- Cook the noodles according to package instructions. Drain and rinse under cold water. Set aside.
- In a small bowl, mix soy sauce, gochujang, honey, and rice vinegar to make the sauce.
- Heat sesame oil and vegetable oil in a large pan or wok over medium-high heat.
- Add minced garlic and sliced onion. Stir-fry for 1–2 minutes until fragrant.
- Add bell peppers and cabbage. Stir-fry for another 3–4 minutes until slightly tender.
- Add the cooked noodles to the pan, followed by the sauce. Toss everything together until evenly coated and heated through, about 2–3 minutes.
- Stir in chopped green onions and sprinkle with sesame seeds before serving.
Notes
- Adjust the amount of gochujang to your preferred spice level.
- Add tofu, chicken, or shrimp for extra protein.
- Use any stir-fry vegetables you have on hand.
