Description

These Sweet and Spicy Korean Stir Fry Noodles are bursting with flavors from gochujang, garlic, and soy sauce. Perfectly chewy noodles are tossed with vegetables and a savory-sweet sauce for a quick and satisfying meal.


Ingredients

  • 8 oz Korean wheat noodles or udon noodles
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 small onion, sliced
  • 1 cup sliced bell peppers (red, yellow, or green)
  • 1 cup shredded cabbage or bok choy
  • 2 green onions, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon rice vinegar
  • 1 teaspoon toasted sesame seeds (optional)

Instructions

  1. Cook the noodles according to package instructions. Drain and rinse under cold water. Set aside.
  2. In a small bowl, mix soy sauce, gochujang, honey, and rice vinegar to make the sauce.
  3. Heat sesame oil and vegetable oil in a large pan or wok over medium-high heat.
  4. Add minced garlic and sliced onion. Stir-fry for 1–2 minutes until fragrant.
  5. Add bell peppers and cabbage. Stir-fry for another 3–4 minutes until slightly tender.
  6. Add the cooked noodles to the pan, followed by the sauce. Toss everything together until evenly coated and heated through, about 2–3 minutes.
  7. Stir in chopped green onions and sprinkle with sesame seeds before serving.

Notes

  • Adjust the amount of gochujang to your preferred spice level.
  • Add tofu, chicken, or shrimp for extra protein.
