Description
Savory bite-sized mushrooms filled with a flavorful mixture of sautéed spinach, garlic, and creamy feta cheese, drizzled with olive oil and baked to golden perfection. This easy-to-make dish makes a perfect appetizer or an elegant side for any Mediterranean-inspired meal.
Ingredients
Mushrooms
- 12 large mushrooms, stems removed
Filling
- 1 cup chopped spinach
- 1 clove garlic, minced
- ½ cup feta cheese
- ¼ tsp black pepper
Finishing
- 1 tbsp olive oil
Instructions
- Preheat the Oven: Set your oven to 375 °F (190 °C) to warm up while you prepare the filling.
- Sauté Spinach and Garlic: In a skillet, lightly sauté the chopped spinach with the minced garlic until the spinach is wilted and fragrant. This helps to soften the spinach and mellow the garlic’s sharpness.
- Mix Filling Ingredients: Remove the skillet from heat and combine the wilted spinach and garlic with the crumbled feta cheese and black pepper. Stir well to ensure an even mixture.
- Stuff the Mushrooms: Spoon the spinach and feta mixture evenly into the cavity of each mushroom cap, packing gently but not overly tight.
- Drizzle with Olive Oil: Place the stuffed mushrooms on a baking tray and drizzle each mushroom lightly with olive oil to help with browning and add richness.
- Bake: Bake in the preheated oven for 15 to 18 minutes until the mushrooms are cooked through and the tops are slightly golden and bubbly.
Notes
- Add breadcrumbs or grated parmesan cheese on top before baking for extra crunch and flavor.
- Use fresh mushrooms for the best texture and flavor.
- If you prefer a milder garlic taste, reduce the garlic to half a clove.
- These mushrooms are best served warm but can also be enjoyed at room temperature.
