Mushrooms

  • 12 large mushrooms, stems removed

Filling

  • 1 cup chopped spinach
  • 1 clove garlic, minced
  • ½ cup feta cheese
  • ¼ tsp black pepper

Finishing

  • 1 tbsp olive oil


Instructions

  1. Preheat the Oven: Set your oven to 375 °F (190 °C) to warm up while you prepare the filling.
  2. Sauté Spinach and Garlic: In a skillet, lightly sauté the chopped spinach with the minced garlic until the spinach is wilted and fragrant. This helps to soften the spinach and mellow the garlic’s sharpness.
  3. Mix Filling Ingredients: Remove the skillet from heat and combine the wilted spinach and garlic with the crumbled feta cheese and black pepper. Stir well to ensure an even mixture.
  4. Stuff the Mushrooms: Spoon the spinach and feta mixture evenly into the cavity of each mushroom cap, packing gently but not overly tight.
  5. Drizzle with Olive Oil: Place the stuffed mushrooms on a baking tray and drizzle each mushroom lightly with olive oil to help with browning and add richness.
  6. Bake: Bake in the preheated oven for 15 to 18 minutes until the mushrooms are cooked through and the tops are slightly golden and bubbly.
