Description
A flavorful and satisfying street food-inspired wrap featuring marinated, grilled paneer, crunchy vegetables, and a tangy chutney, all wrapped in a soft flatbread. Perfect for lunch or a quick meal.
Ingredients
- 250 grams paneer (cubed)
- 1 tablespoon yogurt
- 1 tablespoon ginger-garlic paste
- 1 tablespoon red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon cumin powder
- Salt, to taste
- 1 tablespoon lemon juice
- 1 tablespoon oil (for grilling)
- 4 whole wheat or all-purpose flour tortillas (or parathas)
- 1/2 cup onions, finely sliced
- 1/2 cup tomatoes, finely chopped
- 1/4 cup cucumber, julienned
- 1 tablespoon fresh coriander (cilantro), chopped
- 2 tablespoons tamarind chutney or mint chutney
- 1 teaspoon lemon juice (for chutney)
- A pinch of salt (for chutney)
Instructions
- In a bowl, combine yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, cumin powder, salt, and lemon juice. Add the cubed paneer to this mixture and coat thoroughly. Let it marinate for at least 15-20 minutes.
- Heat 1 tablespoon of oil in a non-stick pan or grill pan over medium heat. Grill the marinated paneer until golden brown on all sides, about 8-10 minutes. Set aside.
- While the paneer is grilling, heat the tortillas or parathas in a flat pan for 1-2 minutes on each side until slightly crispy. Remove and set aside.
- In a small bowl, mix tamarind chutney (or mint chutney), lemon juice, and a pinch of salt to make the chutney.
- Take a tortilla or paratha, spread chutney on it, and add grilled paneer in the center. Top with onions, tomatoes, cucumber, and sprinkle with fresh coriander.
- Roll the tortilla tightly, folding in the sides like a burrito. Cut the Frankie in half and serve immediately.
Notes
- For extra flavor, sprinkle cheese on the paneer before grilling.
- If you prefer more spice, drizzle spicy sriracha or chili sauce along with the chutney.
- Make it vegetarian by swapping paneer with grilled vegetables like bell peppers, zucchini, and mushrooms.
- Use tandoori masala for a smokier flavor and vibrant color in the marinade.
