Description

Spiced Sweet Potato Soup is a creamy and comforting soup made with roasted sweet potatoes, aromatic spices, and a hint of sweetness. Perfect as a warming starter or a light meal, it’s rich in flavor and nutrients.


Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 4 cups sweet potatoes, peeled and cubed
  • 4 cups vegetable or chicken broth
  • 1/2 cup coconut milk (optional, for creaminess)
  • Salt and pepper, to taste
  • Fresh parsley or cilantro, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until soft and translucent, about 5 minutes.
  2. Add minced garlic, cumin, cinnamon, and nutmeg. Cook for another 1–2 minutes until fragrant.
  3. Add cubed sweet potatoes and broth. Bring to a boil, then reduce heat and simmer until the sweet potatoes are tender, about 20 minutes.
  4. Remove the soup from heat and use an immersion blender (or regular blender in batches) to puree until smooth.
  5. Stir in coconut milk if using, and season with salt and pepper to taste.
  6. Reheat gently if needed, then serve hot, garnished with fresh parsley or cilantro.

Notes

  • For extra depth of flavor, roast the sweet potatoes before adding to the soup.
  • Adjust spices to taste; add a pinch of cayenne for heat.
