Description

Warm cranberries baked under a sweet, spiced cobbler topping—festive, tart, and perfect for the holidays. This Spiced Cranberry Cobbler combines the bright tartness of cranberries with warm cinnamon and ginger flavors, all crowned with a tender, buttery cobbler crust that’s easy to prepare and perfect for sharing.

Ingredients

Filling:

  • 3 cups cranberries
  • ½ cup sugar
  • 1 tsp cinnamon
  • ½ tsp ginger
  • 1 tsp orange zest

Topping:

  • 1 cup flour
  • ½ cup sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup milk
  • 4 tbsp melted butter

Instructions

  1. Prepare the cranberry filling: In a mixing bowl, combine the cranberries, sugar, cinnamon, ginger, and orange zest. Stir well to evenly coat the berries with the spices and sugar.
  2. Assemble the cobbler: Transfer the cranberry filling to a baking dish, spreading it into an even layer.
  3. Make the topping: In a separate bowl, mix together the flour, sugar, baking powder, and salt. Add the milk and melted butter, stirring until just combined to form a batter.
  4. Top the filling: Dollop spoonfuls of the topping mixture over the cranberry filling, covering as much surface as possible without pressing down.
  5. Bake the cobbler: Place the baking dish in a preheated oven at 350°F (175°C) and bake for 35 to 40 minutes, or until the topping is golden brown and cooked through and the cranberry filling is bubbling.
  6. Cool and serve: Remove from the oven and let the cobbler cool slightly before serving. For an extra special treat, serve warm with vanilla ice cream.

Notes

  • Add diced apples or pears to the cranberry filling to soften the tartness and add natural sweetness.
  • Serve warm with a scoop of vanilla ice cream or whipped cream for a delightful contrast.
