Ideal for holidays, meal trains, or a cozy family breakfast, this dish combines classic flavors into one filling bake that’s sure to please a crowd.

Ingredients

Sausage and Biscuit Layer

  • 1 lb breakfast sausage
  • 1 can (16 oz) refrigerated biscuits, cut into 1-inch pieces
  • 2 cups shredded cheddar cheese

Gravy

  • ¼ cup unsalted butter
  • ¼ cup all-purpose flour
  • 3 cups whole milk
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)

Egg Mixture

  • 6 large eggs
  • ½ cup milk
  • Salt & pepper to taste

Instructions

  1. Preheat and prepare dish: Preheat your oven to 350°F (180°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Cook sausage: In a skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Drain any excess grease to keep the casserole from becoming greasy.
  3. Layer biscuits: Scatter the cut biscuit pieces evenly across the bottom of the prepared baking dish to form a base layer.
  4. Add sausage and cheese: Sprinkle the cooked sausage evenly over the biscuit pieces, then top with the shredded cheddar cheese for a rich, melty layer.
  5. Make the gravy: Using the same skillet, melt the butter over medium heat, then whisk in the flour and cook for 1–2 minutes to form a roux. Gradually whisk in the milk until the mixture is smooth. Stir in garlic powder, onion powder, salt, and black pepper. Continue to cook, stirring frequently, until the gravy thickens to a creamy consistency. Remove from heat.
  6. Assemble casserole: Pour the prepared gravy evenly over the sausage and biscuit layers in the baking dish.
  7. Prepare egg mixture: In a bowl, whisk together the eggs, ½ cup milk, and salt and pepper to taste until fully combined and slightly frothy.
  8. Add egg mixture: Pour the egg mixture evenly over the casserole to bind all the layers together during baking.
  9. Bake: Place the casserole in the preheated oven and bake for 40–45 minutes or until the casserole is set and golden on top.
  10. Rest and serve: Let the casserole rest for 10 minutes before slicing and serving to allow it to firm up slightly for easier portions.

Notes

  • Add a pinch of cayenne pepper or a splash of hot sauce to the gravy for a spicy Southern kick.
  • Substitute cheddar cheese with Colby Jack or pepper jack cheese for a different flavor profile.
  • To make ahead, assemble the casserole the night before, refrigerate, and bake fresh in the morning for convenience.
