These Smashburger quesadillas combine the best of burgers and quesadillas—juicy smashed beef patties, melty cheese, and crispy tortillas for an irresistible weeknight dinner or game-day snack.
Ingredients
Ground Beef Patties:
- 1 lb ground beef (80/20 blend works best)
 - 1 tsp salt
 - ½ tsp black pepper
 - ½ tsp garlic powder
 
Assembly:
- 4 large flour tortillas
 - 2 cups shredded cheddar cheese (or cheese blend)
 - ½ cup diced onions (optional, for griddling with beef)
 - 2 tbsp butter or oil (for cooking)
 - Toppings: pickles, shredded lettuce, diced tomatoes, burger sauce, or ketchup/mustard
 
Instructions
- Heat skillet: Heat a cast-iron skillet or griddle over medium-high heat.
 - Prepare beef patties: Divide ground beef into 8 portions, smash thin, season, and cook until crispy.
 - Cook onions: Add onions if desired and cook until softened.
 - Assemble quesadillas: Melt butter, layer tortilla, cheese, patties, more cheese, and another tortilla. Cook until golden.
 - Flip and cook: Flip, cook until crispy and cheese melts.
 - Serve: Rest briefly, slice, and serve with toppings or sauces.
 
Notes
- For a true Smashburger flavor, use American cheese instead of cheddar.
 - Add jalapeños or hot sauce for a spicy twist.
