Description

Comforting slow cooker turkey noodle soup made with tender turkey, hearty vegetables, and egg noodles. A cozy, easy meal for busy weeknights.


Ingredients

  • 2 tbsp olive oil

  • 1 medium onion, diced

  • 3 carrots, sliced

  • 2 celery stalks, sliced

  • 3 garlic cloves, minced

  • 8 cups chicken or turkey broth

  • 2 cups cooked turkey, shredded

  • 2 tsp dried thyme

  • 1 tsp dried parsley

  • 1 bay leaf

  • Salt and black pepper, to taste

  • 3 cups wide egg noodles

  • Fresh parsley, chopped (for garnish)

Instructions

  • Heat olive oil in a skillet and sauté onion, carrots, celery, and garlic until softened (about 5 minutes).

  • Transfer vegetables to the slow cooker.

  • Add broth, turkey, thyme, parsley, bay leaf, salt, and pepper. Stir well.

  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.

  • During the last 30 minutes, add egg noodles. Stir occasionally.

  • Remove bay leaf, adjust seasoning, and garnish with fresh parsley before serving.

Notes

  • Use leftover roast turkey or even chicken for this recipe.

  • For extra flavor, add a splash of lemon juice before serving.

  • Store leftovers in an airtight container for up to 3 days
