Description
Comforting slow cooker turkey noodle soup made with tender turkey, hearty vegetables, and egg noodles. A cozy, easy meal for busy weeknights.
Ingredients

2 tbsp olive oil

1 medium onion, diced

3 carrots, sliced

2 celery stalks, sliced

3 garlic cloves, minced

8 cups chicken or turkey broth

2 cups cooked turkey, shredded

2 tsp dried thyme

1 tsp dried parsley
-
1 bay leaf

Salt and black pepper, to taste

3 cups wide egg noodles
- Fresh parsley, chopped (for garnish)
Instructions

Heat olive oil in a skillet and sauté onion, carrots, celery, and garlic until softened (about 5 minutes).

Transfer vegetables to the slow cooker.

Add broth, turkey, thyme, parsley, bay leaf, salt, and pepper. Stir well.

Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.

During the last 30 minutes, add egg noodles. Stir occasionally.
- Remove bay leaf, adjust seasoning, and garnish with fresh parsley before serving.

Use leftover roast turkey or even chicken for this recipe.
