Description

Tender meatballs slow-cooked in a creamy Swedish-style gravy, creating a cozy and savory dish that’s perfect served over mashed potatoes, egg noodles, or rice. This easy slow cooker recipe delivers comfort food with minimal effort, combining flavorful meatballs with a rich and creamy mushroom sauce.

Ingredients

For Meatballs:

  • 1 pound ground beef or beef/pork mix
  • ½ cup breadcrumbs
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

For Sauce:

  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup beef broth
  • ½ cup sour cream
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon parsley
  • Salt and pepper to taste

Instructions

  1. Prepare Meatball Mixture: In a large bowl, combine ground beef or beef/pork mix, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
  2. Form Meatballs: Shape the mixture into small, evenly sized meatballs, about 1 inch in diameter, to ensure even cooking.
  3. Optional Browning: For enhanced flavor and texture, heat a skillet over medium heat and brown the meatballs on all sides, about 2-3 minutes per side, then transfer to the slow cooker. This step can be skipped for convenience.
  4. Place Meatballs in Slow Cooker: Arrange the prepared or browned meatballs evenly in the bottom of the slow cooker crock.
  5. Prepare Sauce: In a separate bowl, whisk together the cream of mushroom soup, beef broth, sour cream, Worcestershire sauce, parsley, salt, and pepper until smooth.
  6. Combine and Cook: Pour the sauce mixture over the meatballs in the slow cooker, ensuring they are well coated. Cover with the lid and cook on low for 4 to 6 hours or on high for 2 to 3 hours until meatballs are cooked through and tender.
  7. Serve: Carefully spoon the meatballs and creamy sauce over a bed of mashed potatoes, egg noodles, or rice. Garnish optionally with extra parsley and serve hot.

Notes

  • Add a pinch of nutmeg to the sauce for an authentic Swedish flavor boost.
  • Frozen meatballs can be used to save time; just increase the cook time accordingly on low to 6–7 hours.
  • For extra richness, stir in an additional 2 tablespoons of sour cream just before serving.
  • Adjust seasoning with salt and pepper to taste before serving.
