Description
A rich and hearty slow cooker beef stew made with tender beef chunks, Guinness stout, potatoes, carrots, and aromatic herbs, simmered to perfection for a deep, robust flavor ideal for cozy meals.
Ingredients
Beef and Vegetables
- 2 lb beef stew meat
- 1 onion, diced
- 3 carrots, sliced
- 2 potatoes, diced
- 3 cloves garlic, minced
Liquids and Seasonings
- 1 bottle Guinness or stout (approximately 11.2 oz)
- 2 cups beef broth
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Add Ingredients: Place the beef stew meat, diced onion, sliced carrots, diced potatoes, and minced garlic into the slow cooker.
- Combine Liquids and Seasonings: Pour in the bottle of Guinness beer and beef broth. Add tomato paste, thyme, rosemary, salt, and pepper. Stir everything together until well combined.
- Cook the Stew: Cover the slow cooker with the lid and cook on low for 8 hours or on high for 4 to 5 hours, until the beef is tender and the flavors have melded beautifully.
- Adjust Seasoning: Taste the stew and adjust the salt and pepper if needed before serving.
- Optional Thickness: For a thicker stew, mash some of the potatoes directly in the slow cooker just before serving to help thicken the broth.
Notes
- For a heartier texture, mash a few potatoes at the end of cooking to thicken the stew naturally.
- Serve the stew hot with crusty bread to soak up the flavorful broth.
- This stew can be made ahead and often tastes better the next day as the flavors deepen.
- Use fresh herbs if available, adjusting quantities accordingly.
