Description

A rich and hearty slow cooker beef stew made with tender beef chunks, Guinness stout, potatoes, carrots, and aromatic herbs, simmered to perfection for a deep, robust flavor ideal for cozy meals.

Ingredients

Beef and Vegetables

  • 2 lb beef stew meat
  • 1 onion, diced
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 3 cloves garlic, minced

Liquids and Seasonings

  • 1 bottle Guinness or stout (approximately 11.2 oz)
  • 2 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Add Ingredients: Place the beef stew meat, diced onion, sliced carrots, diced potatoes, and minced garlic into the slow cooker.
  2. Combine Liquids and Seasonings: Pour in the bottle of Guinness beer and beef broth. Add tomato paste, thyme, rosemary, salt, and pepper. Stir everything together until well combined.
  3. Cook the Stew: Cover the slow cooker with the lid and cook on low for 8 hours or on high for 4 to 5 hours, until the beef is tender and the flavors have melded beautifully.
  4. Adjust Seasoning: Taste the stew and adjust the salt and pepper if needed before serving.
  5. Optional Thickness: For a thicker stew, mash some of the potatoes directly in the slow cooker just before serving to help thicken the broth.

Notes

  • For a heartier texture, mash a few potatoes at the end of cooking to thicken the stew naturally.
  • Serve the stew hot with crusty bread to soak up the flavorful broth.
  • This stew can be made ahead and often tastes better the next day as the flavors deepen.
  • Use fresh herbs if available, adjusting quantities accordingly.
