Description

A comforting twist on the classic green bean casserole, this slow cooker recipe combines tender chicken breasts with green beans and creamy mushroom soup, all slow cooked to perfection for a hearty all-in-one meal. Crispy fried onions added at the end provide a delightful crunch to this easy, family-friendly casserole.

Ingredients

Protein

  • 2 chicken breasts

Vegetables

  • 3 cups green beans (fresh or frozen)
  • 1 onion, diced

Sauce and Seasoning

  • 1 can cream of mushroom soup (or homemade)
  • 1/2 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper

Toppings

  • 1 cup crispy fried onions (added at end)

Instructions

  1. Prepare the base: Place the chicken breasts at the bottom of the slow cooker to form the protein base of your casserole.
  2. Add vegetables: Add the green beans and diced onion on top of the chicken, layering the vegetables evenly.
  3. Mix and pour sauce: In a separate bowl, whisk together the cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper until smooth. Pour this mixture evenly over the chicken and vegetables in the slow cooker.
  4. Slow cook: Cover and cook on low for 6 hours or on high for 3 to 4 hours. This allows the chicken to cook tenderly and the flavors to meld beautifully.
  5. Shred and stir: After cooking, shred the chicken directly in the slow cooker using two forks, then stir everything together to combine the ingredients fully.
  6. Top and serve: Just before serving, sprinkle the crispy fried onions over the top of the casserole to add a crunchy texture contrast. Serve warm for a comforting meal.

Notes

  • Use homemade cream of mushroom soup to create a dairy-free version.
  • Add sliced mushrooms to the casserole for extra texture and flavor.
  • If using fresh green beans, trim ends and rinse before use; frozen green beans can be added directly.
  • For lower sodium, choose low-sodium soup and adjust salt to taste.
  • Leftovers keep well refrigerated for up to 3 days and can be reheated gently in the microwave or oven.
