Description

Tender, juicy roast beef that melts in your mouth — slow cooked with herbs and vegetables for the ultimate comfort dinner. This slow cooker recipe combines chuck roast with aromatic onions, carrots, beef broth, Worcestershire sauce, and seasonings to create a flavorful and effortless meal perfect for busy days.

Ingredients

Beef and Vegetables

  • 3 lbs chuck roast
  • 1 onion, sliced
  • 3 carrots, chopped

Liquids and Seasonings

  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp garlic powder
  • Salt & pepper, to taste

Instructions

  1. Prepare the ingredients: Begin by slicing the onion and chopping the carrots as directed. Trim excess fat from the chuck roast if desired.
  2. Assemble in the slow cooker: Place the chuck roast in the slow cooker, then add the sliced onions and chopped carrots around and on top of the meat to infuse flavor during cooking.
  3. Add liquids and seasonings: Pour in the beef broth and Worcestershire sauce evenly over the roast and vegetables. Sprinkle the garlic powder, salt, and freshly ground pepper over everything to season the dish.
  4. Cook the roast: Cover the slow cooker with its lid and set it to cook on Low for 8 to 9 hours, or on High for 4 to 5 hours, until the roast is fork-tender and easily pulls apart.
  5. Shred and serve: Once cooked, remove the beef and shred it with forks. Serve hot alongside your choice of sides, such as mashed cauliflower or roasted vegetables, for a comforting, low-carb meal.

Notes

  • For a hearty meal, serve shredded beef with mashed cauliflower or roasted vegetables.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • To thicken the cooking liquid into gravy, strain and simmer on the stovetop with a cornstarch slurry before serving.
  • Adjust seasoning to taste after cooking, especially salt and pepper.
