Ingredients
Beef and Vegetables
- 3 lbs chuck roast
- 1 onion, sliced
- 3 carrots, chopped
Liquids and Seasonings
- 2 cups beef broth
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- Salt & pepper, to taste
Instructions
- Prepare the ingredients: Begin by slicing the onion and chopping the carrots as directed. Trim excess fat from the chuck roast if desired.
- Assemble in the slow cooker: Place the chuck roast in the slow cooker, then add the sliced onions and chopped carrots around and on top of the meat to infuse flavor during cooking.
- Add liquids and seasonings: Pour in the beef broth and Worcestershire sauce evenly over the roast and vegetables. Sprinkle the garlic powder, salt, and freshly ground pepper over everything to season the dish.
- Cook the roast: Cover the slow cooker with its lid and set it to cook on Low for 8 to 9 hours, or on High for 4 to 5 hours, until the roast is fork-tender and easily pulls apart.
- Shred and serve: Once cooked, remove the beef and shred it with forks. Serve hot alongside your choice of sides, such as mashed cauliflower or roasted vegetables, for a comforting, low-carb meal.
Notes
- For a hearty meal, serve shredded beef with mashed cauliflower or roasted vegetables.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
