- 4 chicken thighs or breasts
Vegetables
- 1 onion, sliced
- 1 bell pepper, sliced
- 1 cup mushrooms, sliced
- 3 cloves garlic, minced

- 1 can crushed tomatoes (about 14 oz)
- 1 tsp oregano
- 1 tsp basil
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Prepare the vegetables: Place the sliced onion, bell pepper, mushrooms, and minced garlic in the bottom of the slow cooker, spreading them out evenly for a flavorful base.
- Add the chicken: Lay the chicken thighs or breasts on top of the vegetables. Season the chicken evenly with oregano, basil, salt, and pepper to enhance the flavors.
- Add the tomatoes: Pour the can of crushed tomatoes over the chicken and vegetables, ensuring everything is mostly covered to create the sauce.
- Cook slowly: Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the chicken is tender and cooked through.
- Serve: Once cooked, serve the chicken cacciatore over cooked pasta, rice, or creamy polenta for a complete meal.
Notes
- Add olives for a more traditional flavor in the sauce.
- If the sauce is too thin after cooking, simmer it on the stovetop to thicken before serving.
