Ingredients

Chicken

  • 4 chicken thighs or breasts

Vegetables

  • 1 onion, sliced
  • 1 bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced

Other Ingredients

  • 1 can crushed tomatoes (about 14 oz)
  • 1 tsp oregano
  • 1 tsp basil
  • 1/2 tsp salt
  • 1/2 tsp pepper


Instructions

  1. Prepare the vegetables: Place the sliced onion, bell pepper, mushrooms, and minced garlic in the bottom of the slow cooker, spreading them out evenly for a flavorful base.
  2. Add the chicken: Lay the chicken thighs or breasts on top of the vegetables. Season the chicken evenly with oregano, basil, salt, and pepper to enhance the flavors.
  3. Add the tomatoes: Pour the can of crushed tomatoes over the chicken and vegetables, ensuring everything is mostly covered to create the sauce.
  4. Cook slowly: Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the chicken is tender and cooked through.
  5. Serve: Once cooked, serve the chicken cacciatore over cooked pasta, rice, or creamy polenta for a complete meal.
