Ingredients

Pasta

  • 12 oz linguine

Shrimp & Sauce

  • 1 lb large shrimp, peeled & deveined
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • ½ cup dry white wine (or broth)
  • Juice of 1 lemon
  • ¼ cup chopped parsley
  • Salt & pepper to taste


Instructions

  1. Cook Pasta: Cook linguine according to package instructions until al dente. Reserve ½ cup of the pasta cooking water before draining to use later in the sauce.
  2. Sauté Garlic: In a large skillet, melt butter together with olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant but not browned.
  3. Cook Shrimp: Add the peeled and deveined shrimp to the skillet. Cook the shrimp for 2 to 3 minutes on each side until they turn pink and opaque.
  4. Create Sauce: Stir in the dry white wine, lemon juice, and season with salt and pepper. Allow the sauce to simmer for 2 minutes so flavors meld and the alcohol cooks off.
  5. Toss Pasta in Sauce: Add the cooked linguine to the skillet with the shrimp and sauce. Toss well to combine, adding a splash of the reserved pasta water if the sauce needs loosening.
  6. Garnish and Serve: Sprinkle chopped parsley over the top, toss lightly, and serve immediately while hot.
