Description

Shepherd’s Pie Soup is a hearty and comforting soup that captures the flavors of the classic Shepherd’s Pie in an easy-to-serve bowl. Packed with ground meat, vegetables, and mashed potatoes, it’s perfect for a cozy dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef or lamb
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups beef or vegetable broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 34 medium potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ground meat and cook until browned. Remove excess fat if necessary.
  2. Add chopped onion, garlic, carrots, and celery. Sauté until vegetables are softened, about 5–6 minutes.
  3. Pour in broth, Worcestershire sauce, thyme, and rosemary. Bring to a boil, then reduce heat and simmer for 15–20 minutes.
  4. Meanwhile, cook potatoes in a separate pot of boiling water until tender, about 15 minutes. Drain and mash with milk, butter, salt, and pepper.
  5. Stir the mashed potatoes into the soup partially, leaving some to dollop on top when serving, or keep them separate for individual servings.
  6. Adjust seasoning with salt and pepper. Serve hot, garnished with fresh parsley.

Notes

  • For a richer flavor, add a splash of cream to the mashed potatoes.
  • You can make this soup in advance and reheat; the flavors improve after a few hours.
  • Optional: sprinkle shredded cheddar on top before serving for an extra Shepherd’s Pie feel.
