Description
Shepherd’s Pie Soup is a hearty and comforting soup that captures the flavors of the classic Shepherd’s Pie in an easy-to-serve bowl. Packed with ground meat, vegetables, and mashed potatoes, it’s perfect for a cozy dinner.
Ingredients
- 1 tablespoon olive oil
- 1 pound ground beef or lamb
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups beef or vegetable broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 3–4 medium potatoes, peeled and cubed
- 1/4 cup milk
- 2 tablespoons butter
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
- In a large pot, heat olive oil over medium heat. Add ground meat and cook until browned. Remove excess fat if necessary.
- Add chopped onion, garlic, carrots, and celery. Sauté until vegetables are softened, about 5–6 minutes.
- Pour in broth, Worcestershire sauce, thyme, and rosemary. Bring to a boil, then reduce heat and simmer for 15–20 minutes.
- Meanwhile, cook potatoes in a separate pot of boiling water until tender, about 15 minutes. Drain and mash with milk, butter, salt, and pepper.
- Stir the mashed potatoes into the soup partially, leaving some to dollop on top when serving, or keep them separate for individual servings.
- Adjust seasoning with salt and pepper. Serve hot, garnished with fresh parsley.
Notes
- For a richer flavor, add a splash of cream to the mashed potatoes.
- You can make this soup in advance and reheat; the flavors improve after a few hours.
- Optional: sprinkle shredded cheddar on top before serving for an extra Shepherd’s Pie feel.
