Potatoes

  • 1 lb baby potatoes, halved
  • 1 ½ tbsp olive oil
  • 1 tbsp fresh rosemary, chopped
  • Salt and pepper, to taste


Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure a hot environment for roasting the chicken and potatoes evenly.
  2. Prepare Potatoes: In a bowl, toss the halved baby potatoes with half of the olive oil, chopped rosemary, salt, and pepper until they are evenly coated. Spread the potatoes out in a single layer on a sheet pan.
  3. Season Chicken: In a separate bowl, combine the remaining olive oil with lemon juice, lemon zest, minced garlic, salt, and pepper.
