Description

Sweet and savory meet in this elegant yet easy Seared Beef Chops with Apples — juicy beef or veal chops paired with caramelized apples and onions in a light apple cider pan sauce, perfect for a comforting autumn dinner.

Ingredients

Meat

  • 4 beef or veal chops

Pan Sauce and Vegetables

  • 1 tbsp olive oil
  • 1 tbsp butter
  • 2 apples, sliced
  • 1 small onion, thinly sliced
  • ¼ cup apple cider or broth
  • 1 tsp Dijon mustard
  • Salt & pepper to taste

Instructions

  1. Seasoning the Chops: Generously season the beef or veal chops with salt and pepper on both sides to enhance their natural flavors.
  2. Searing the Chops: Heat the olive oil in a skillet over medium-high heat. Add the chops and sear for 3 to 4 minutes on each side until a golden-brown crust forms. Remove the chops from the skillet and set them aside to rest.
  3. Cooking the Apples and Onions: In the same skillet, add the butter. Once melted, add the sliced apples and thinly sliced onions. Cook for about 5 minutes, stirring occasionally, until the apples and onions soften and start to caramelize.
  4. Making the Pan Sauce: Stir in the apple cider (or broth) and Dijon mustard. Allow the mixture to simmer gently for 2 minutes, letting the flavors meld and the sauce slightly reduce.
  5. Reheating the Chops: Return the seared chops to the skillet, spooning the pan sauce over them to coat. Let them warm through for a minute or two. Serve warm, topped with the caramelized apples and onions.

Notes

  • This dish pairs beautifully with creamy mashed potatoes or roasted vegetables for a hearty meal.
  • Pork chops can be used as an alternative to beef or veal for a different flavor profile.
