Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt

- 1/2 cup unsalted butter, cold and cut into small cubes
- 1 cup shredded sharp cheddar cheese
- 2 tablespoons fresh parsley, chopped

- 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
- 3/4 cup buttermilk (or whole milk with 1 tablespoon lemon juice or vinegar)
Instructions
- Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
- Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, garlic powder, and black pepper.
- Cut in the Butter: Add the cold butter cubes to the dry ingredients. Using a pastry cutter, fork, or your hands, work the butter into the flour mixture until it resembles coarse crumbs with pea-sized pieces of butter.
- Add Cheese and Herbs: Stir in the shredded cheddar cheese and chopped herbs (parsley, rosemary, and thyme).
- Add the Buttermilk: Pour in the buttermilk and gently stir until the dough just comes together. Do not overmix; the dough should be slightly shaggy.
- Shape the Biscuits: Turn the dough onto a lightly floured surface and gently knead it a few times to bring it together. Pat the dough into a 1-inch thick rectangle. Use a biscuit cutter (or a glass) to cut out biscuits, pressing straight down without twisting.
- Bake the Biscuits: Place the biscuits on the prepared baking sheet, about 1 inch apart. Bake for 12–15 minutes, or until the tops are golden brown and the biscuits have risen.
- Serve: Allow the biscuits to cool for a few minutes before serving. Enjoy them warm with butter or as a side to your favorite dish!
