Ingredients

Tomatoes

  • 6 Roma or cherry tomatoes, halved

Seasoning

  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 tsp Italian seasoning
  • Salt & pepper, to taste

Optional Garnishes

  • Fresh basil
  • Parmesan cheese


Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the tomatoes.
  2. Arrange Tomatoes: Place the halved tomatoes cut side up on a baking sheet, ensuring they are spaced evenly for even roasting.
  3. Season Tomatoes: Drizzle the tomatoes with olive oil, minced garlic, Italian seasoning, and sprinkle with salt and pepper to taste.
  4. Roast: Roast in the preheated oven for 20–25 minutes, or until the edges of the tomatoes begin to caramelize and develop a rich, golden color.
  5. Garnish and Serve: Remove from the oven and optionally garnish with fresh basil leaves or grated Parmesan cheese before serving as a side dish, topping, or appetizer.
