Roasted Garlic and Herb Button Mushrooms are a savory side dish or appetizer featuring whole mushrooms roasted in olive oil, garlic, and fresh herbs for a golden-brown, aromatic finish.
Ingredients
- 1 lb whole button mushrooms, cleaned and trimmed
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 1 tablespoon fresh rosemary or thyme, chopped (or 1 teaspoon dried)
- Salt and pepper to taste
- 1 tablespoon fresh parsley, chopped (for garnish)
- Optional: 1 tablespoon balsamic vinegar or lemon juice for added brightness
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the mushrooms with olive oil, minced garlic, rosemary or thyme, salt, and pepper until evenly coated.
- Spread the mushrooms in a single layer on a baking sheet lined with parchment paper or foil.
- Roast for 20–25 minutes, stirring once halfway through, until the mushrooms are golden brown and tender.
- Optional: Drizzle with balsamic vinegar or lemon juice during the last 5 minutes of roasting for extra flavor.
- Remove from the oven and garnish with chopped parsley before serving.
Notes
- Don’t soak the mushrooms. Clean them with a damp paper towel or rinse briefly and pat dry immediately to avoid sogginess.
- For a richer flavor, you can replace some of the olive oil with melted butter.
- Spread the mushrooms in a single layer to ensure even roasting.
- If you prefer, you can use a mix of different types of mushrooms like cremini or baby bella for variety.
