Description

Roasted Garlic and Herb Button Mushrooms are a savory side dish or appetizer featuring whole mushrooms roasted in olive oil, garlic, and fresh herbs for a golden-brown, aromatic finish.


Ingredients

  • 1 lb whole button mushrooms, cleaned and trimmed
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 tablespoon fresh rosemary or thyme, chopped (or 1 teaspoon dried)
  • Salt and pepper to taste
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Optional: 1 tablespoon balsamic vinegar or lemon juice for added brightness

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the mushrooms with olive oil, minced garlic, rosemary or thyme, salt, and pepper until evenly coated.
  3. Spread the mushrooms in a single layer on a baking sheet lined with parchment paper or foil.
  4. Roast for 20–25 minutes, stirring once halfway through, until the mushrooms are golden brown and tender.
  5. Optional: Drizzle with balsamic vinegar or lemon juice during the last 5 minutes of roasting for extra flavor.
  6. Remove from the oven and garnish with chopped parsley before serving.

Notes

  • Don’t soak the mushrooms. Clean them with a damp paper towel or rinse briefly and pat dry immediately to avoid sogginess.
  • For a richer flavor, you can replace some of the olive oil with melted butter.
  • Spread the mushrooms in a single layer to ensure even roasting.
  • If you prefer, you can use a mix of different types of mushrooms like cremini or baby bella for variety.
