Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cubed

  • 1 tbsp olive oil

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 2 medium carrots, peeled and sliced

  • 2 celery stalks, chopped

  • 4 cups chicken broth

  • 1 cup heavy cream

  • 1 cup half-and-half or milk

  • 1 tsp dried thyme

  • 1 tsp dried basil

  • 1/2 tsp paprika

  • Salt and freshly ground black pepper, to taste

  • 1/2 cup grated Parmesan cheese

  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the cubed chicken and cook until browned and cooked through, about 6-7 minutes. Remove the chicken and set aside.

  2. In the same pot, add the diced onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables soften.

  3. Pour in the chicken broth, heavy cream, and half-and-half. Stir in the thyme, basil, paprika, salt, and pepper. Bring to a simmer.

  4. Add the cooked chicken back into the pot and simmer the soup for 10-15 minutes, until the vegetables are tender and the soup is heated through.

  5. Stir in the grated Parmesan cheese and cook for an additional 2-3 minutes, until the cheese is melted and the soup is creamy.

  6. Taste and adjust seasoning with more salt and pepper if needed.

  7. Serve hot, garnished with fresh parsley.
