Ingredients

For the Cake:

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground ginger
  • 1 cup pumpkin purée (not pie filling)
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 2 large eggs
  • ⅓ cup vegetable oil (or melted butter)
  • 1 tsp vanilla extract
  • ¾ cup milk

For the Cinnamon Swirl:

  • ½ cup butter, melted
  • ½ cup brown sugar, packed
  • 1 tbsp ground cinnamon

For the Glaze:

  • 1 cup powdered sugar
  • 23 tbsp milk (as needed for consistency)
  • ½ tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a medium bowl, whisk together flour, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In a large bowl, whisk pumpkin purée, sugars, eggs, oil, vanilla, and milk until smooth.
  4. Gradually add the dry ingredients into the wet mixture, stirring until just combined. Spread batter evenly into prepared pan.
  5. In a small bowl, mix melted butter, brown sugar, and cinnamon. Drop spoonfuls of the mixture over the cake batter and swirl gently with a knife.
  6. Bake for 28–32 minutes, or until a toothpick inserted in the center comes out clean.
  7. While cake cools slightly, whisk together powdered sugar, milk, and vanilla for the glaze.
  8. Drizzle glaze over warm cake before serving.
