Description
No-bake peanut butter balls coated in melted white chocolate, these creamy and festive treats are perfect for gifting during the holidays or enjoying as a sweet snack.
Ingredients
Peanut Butter Mixture
- 1 cup peanut butter
- ½ cup butter, softened
- 2 cups powdered sugar
Coating
- 2 cups white chocolate
- Sprinkles (optional)
Instructions
- Prepare the Peanut Butter Mixture: In a large mixing bowl, combine the peanut butter, softened butter, and powdered sugar. Mix thoroughly until the ingredients form a smooth, consistent dough-like mixture.
- Shape the Snowballs: Using your hands or a small cookie scoop, roll the peanut butter mixture into approximately 24 evenly sized balls. Place them on a tray or baking sheet and chill in the refrigerator for about 20 minutes to firm up.
- Melt the White Chocolate: While the peanut butter balls chill, melt the white chocolate in a heatproof bowl over a pot of simmering water (double boiler) or in short bursts in the microwave, stirring frequently until smooth and fully melted.
- Coat the Balls: Remove the chilled peanut butter balls from the fridge. Using a fork or dipping tool, dip each ball into the melted white chocolate to fully coat. Allow excess chocolate to drip off before placing them back on the tray lined with parchment paper.
- Decorate: If desired, immediately sprinkle the coated balls with festive sprinkles before the chocolate sets. Then refrigerate the coated snowballs for an additional 10-15 minutes to allow the white chocolate to harden completely.
Notes
- Store the peanut butter snowballs in an airtight container in the refrigerator for up to 2 weeks.
- For a variation, substitute peanut butter with almond butter to alter the flavor.
- Ensure the white chocolate is fully melted and smooth to achieve an even coating.
- Use parchment paper or a silicone mat to prevent sticking while the balls set.
- These treats can also be frozen for longer storage; thaw before serving.
