Ingredients

Instructions

  1. Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt until well combined.
  2. Combine Wet Ingredients: In a separate bowl, beat the egg and then add the milk, creamy peanut butter, and melted butter or oil. Mix until smooth and fully incorporated.
  3. Combine Wet and Dry: Pour the wet ingredients into the dry ingredients. Gently stir with a spatula or spoon until just combined, being careful not to overmix. A few lumps are fine for fluffy pancakes.
  4. Prepare the Skillet: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
  5. Cook Pancakes: Pour about 1/4 cup of batter per pancake onto the skillet. Cook until bubbles begin to form on the surface and the edges look set, about 2-3 minutes.
