Description
Fluffy pancakes infused with creamy peanut butter for a rich, nutty, protein-packed breakfast that’s quick and delicious.
Ingredients
Dry Ingredients
- 1 cup all-purpose flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Wet Ingredients
- 1 egg
- 1 cup milk
- 1/4 cup creamy peanut butter
- 1 tbsp melted butter or oil
Optional
- Chocolate chips or sliced bananas
Instructions
- Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and salt until well combined.
- Combine Wet Ingredients: In a separate bowl, beat the egg and then add the milk, creamy peanut butter, and melted butter or oil. Mix until smooth and fully incorporated.
- Combine Wet and Dry: Pour the wet ingredients into the dry ingredients. Gently stir with a spatula or spoon until just combined, being careful not to overmix. A few lumps are fine for fluffy pancakes.
- Prepare the Skillet: Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.
- Cook Pancakes: Pour about 1/4 cup of batter per pancake onto the skillet. Cook until bubbles begin to form on the surface and the edges look set, about 2-3 minutes.
- Flip and Finish: Carefully flip each pancake and cook for another 1-2 minutes until golden brown and cooked through.
- Serve: Remove from skillet and serve warm. Optionally, top with sliced bananas, chocolate chips, or maple syrup for extra flavor.
Notes
- Add more milk to the batter for thinner pancakes if desired.
- Top pancakes with banana slices, chocolate chips, or maple syrup to enhance the flavor.
- Use creamy peanut butter for smooth texture; crunchy can be substituted for added texture.
- Ensure the skillet is properly heated to prevent sticking and promote even browning.
