  • ½ cup sour cream
  • 1 cup diced fresh or canned peaches

For the Brown Sugar Frosting:

  • ½ cup unsalted butter
  • 1 cup packed brown sugar
  • ¼ cup milk
  • 2 cups powdered sugar
  • ½ tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  2. Cream butter and sugar until fluffy. Add eggs one at a time, followed by vanilla and sour cream.
  3. Gradually add dry ingredients to the wet mixture, folding in diced peaches.
  4. Bake for 30–35 minutes until a toothpick comes out clean. Cool the cake completely.
  5. For the Brown Sugar Frosting: Melt butter in a saucepan. Stir in brown sugar, cook for 2–3 minutes. Add milk, bring to a boil, then remove from heat. Cool slightly. Whisk in powdered sugar and vanilla until smooth.
  6. Frost the cooled cake and allow the frosting to set before slicing.
