Ingredients

 - 1 large egg
 - 2 tbsp melted butter (plus more for greasing)
 - 1 tsp vanilla extract

Instructions
- Preheat oven to 350°F (175°C). Grease a mini muffin pan.
 - In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

 - Pour wet ingredients into dry and stir until just combined (do not overmix).
 - Spoon batter into prepared mini muffin cups, filling about ¾ full.
