 - 1 tsp dried basil
 - 1 tsp dried oregano
 - 1/2 tsp red pepper flakes (optional for heat)
 - 2 cups uncooked lasagna noodles, broken into pieces
 - 1 cup ricotta cheese
 - 1 cup shredded mozzarella cheese (plus extra for topping)
 - 1/4 cup grated Parmesan cheese
 - Salt and pepper to taste
 - Fresh basil or parsley for garnish (optional)
 
Instructions
- Cook the Meat:
 - In a large pot, cook the ground beef over medium heat until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
 - Add the diced onion and minced garlic to the pot and cook for 2-3 minutes until softened and fragrant.
 - Add the Tomatoes and Broth:
 - Stir in the diced tomatoes, tomato paste, chicken broth, basil, oregano, and red pepper flakes (if using). Bring the mixture to a boil.
 - Add the Noodles:
 - Once the broth is boiling, add the broken lasagna noodles and stir to combine. Lower the heat and let the soup simmer for about 10-12 minutes, or until the noodles are tender. Stir occasionally to prevent the noodles from sticking together.
