Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 medium onion, diced

  • 1 can (6 oz) tomato paste
  • 4 cups chicken or vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional for heat)
  • 2 cups uncooked lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese (plus extra for topping)
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Instructions

  • Cook the Meat:
  • In a large pot, cook the ground beef over medium heat until browned, breaking it apart with a spoon as it cooks. Drain any excess fat.
  • Add the diced onion and minced garlic to the pot and cook for 2-3 minutes until softened and fragrant.
  • Add the Tomatoes and Broth:
  • Stir in the diced tomatoes, tomato paste, chicken broth, basil, oregano, and red pepper flakes (if using). Bring the mixture to a boil.
  • Add the Noodles:
  • Once the broth is boiling, add the broken lasagna noodles and stir to combine. Lower the heat and let the soup simmer for about 10-12 minutes, or until the noodles are tender. Stir occasionally to prevent the noodles from sticking together.
  • Make the Cheese Mixture:
  • While the soup is simmering, mix together the ricotta, mozzarella, and Parmesan cheeses in a bowl.
  • Finish the Soup:
  • Once the noodles are cooked, stir in the cheese mixture until it’s evenly distributed and the soup is creamy. Season with salt and pepper to taste.
  • Serve:
  • Ladle the soup into bowls and top with extra mozzarella cheese. Garnish with fresh basil or parsley if desired. Serve with crusty bread for dipping.
