Description

This One Pan Broccoli Cheese Wild Rice Casserole is a creamy, comforting dish loaded with tender broccoli and melted cheese, all baked together in one pan. Perfect as a cozy vegetarian main or a hearty side dish, this casserole combines nutty wild rice with a smooth, cheesy sauce for a deliciously satisfying meal.

Ingredients

Base Ingredients

  • 1 cup uncooked wild rice blend
  • 3 cups vegetable broth
  • 1 tsp garlic powder
  • Salt & pepper, to taste

Vegetables

  • 2 cups broccoli florets

Dairy

  • 1 cup shredded cheddar or Gruyere cheese
  • ½ cup milk or cream
  • 1 tbsp butter

Instructions

  1. Prepare the rice base: In a casserole dish, combine the uncooked wild rice blend, vegetable broth, garlic powder, salt, and pepper. Stir gently to mix the seasonings evenly throughout the liquid and rice.
  2. Initial baking: Cover the casserole dish tightly with a lid or aluminum foil and bake in a preheated oven at 375°F (190°C) for 45 minutes. This step cooks the wild rice and infuses it with flavor from the broth and seasonings.
  3. Add broccoli and dairy: Carefully remove the casserole from the oven. Stir in the broccoli florets, milk or cream, and butter, mixing well to combine all ingredients evenly.
  4. Add cheese topping: Sprinkle the shredded cheddar or Gruyere cheese evenly over the top of the casserole.
  5. Final baking: Cover the casserole again and bake for an additional 10 to 15 minutes, or until the cheese is melted and the casserole is creamy and heated through.
  6. Serve: Remove from the oven and let it sit for a few minutes before serving to allow the casserole to set slightly for easier serving.

Notes

  • Add sliced mushrooms or cooked chicken for a fuller, protein-packed meal.
  • Top with crispy fried onions or breadcrumbs before baking for extra crunch and texture.
  • Use cream instead of milk for a richer, creamier casserole.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
