  1. Prepare the pan: Line an 8×8-inch pan with parchment paper to prevent sticking and make it easier to remove the bars later.
  2. Warm peanut butter mixture: In a microwave-safe bowl, warm the peanut butter and honey or light corn syrup gently for about 30 seconds. Stir until smooth and well combined to create a sticky binder for the chips.
  3. Combine with chips: Fold the crushed potato chips into the peanut butter mixture carefully to maintain some chip texture, then press the mixture firmly and evenly into the prepared pan.
  4. Melt chocolate topping: In a separate bowl, melt the semisweet chocolate chips with the coconut oil (if using) either in the microwave in short bursts or over a double boiler until smooth and glossy.
  5. Apply chocolate layer: Spread the melted chocolate evenly over the pressed chip mixture in the pan to create a rich, decadent topping.
