Description

Ingredients

Baguette:

  • 1 baguette, sliced into ½-inch rounds
  • 2 tablespoons olive oil (for brushing)

Tomato-Mozzarella Mixture:

  • 2 large ripe tomatoes, diced (or 1 cup cherry tomatoes, halved)
  • 8 oz fresh mozzarella, diced or sliced
  • 2 tablespoons fresh basil, chopped
  • 1 garlic clove, minced (optional)
  • 1 tablespoon olive oil (for tomato mixture)
  • Salt and black pepper, to taste
  • Balsamic glaze, for drizzling


Instructions

  1. Preheat oven: Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush lightly with olive oil. Toast for 6–8 minutes, until golden.
  2. Prepare tomato-mozzarella mixture: In a bowl, combine tomatoes, mozzarella, basil, garlic (if using), olive oil, salt, and pepper. Toss gently.
  3. Assemble bruschetta: Spoon tomato-mozzarella mixture onto toasted baguette slices.
  4. Drizzle with balsamic glaze: Drizzle with balsamic glaze before serving.
