Description
This Meaty Zucchini Casserole features layers of fresh zucchini, savory ground beef, rich tomato sauce, and melted cheeses baked into a hearty, low-carb dish perfect for a comforting dinner.
Ingredients
Meat and Sauce
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups tomato sauce
- 1 tsp Italian seasoning
- Salt & pepper, to taste
Vegetables and Cheese
- 3 medium zucchini, sliced ¼ inch thick
- 1 cup mozzarella cheese, shredded
- ½ cup Parmesan cheese, grated
Instructions
- Brown the beef: In a large skillet over medium heat, cook the ground beef with chopped onion and minced garlic until the beef is browned and the onions are translucent. Drain excess fat thoroughly.
- Prepare the sauce: Stir in the tomato sauce and Italian seasoning into the browned beef mixture. Season with salt and pepper to taste. Simmer for a few minutes to blend flavors.
- Assemble the casserole: In a baking dish, layer half of the sliced zucchini evenly on the bottom. Spread half of the meat sauce over the zucchini layer, then sprinkle with half of the mozzarella and Parmesan cheeses. Repeat these layers with the remaining zucchini, meat sauce, and cheeses.
- Bake the casserole: Preheat your oven to 375°F (190°C). Place the assembled casserole in the oven and bake uncovered for 25 to 30 minutes, or until the cheese is melted, bubbly, and golden around the edges.
- Serve: Remove from oven and let the casserole rest for a few minutes before slicing. Serve warm as a satisfying main course.
Notes
- For a lasagna-style texture, add dollops of ricotta cheese between the layers.
- You can substitute ground turkey or chicken for beef for a leaner option.
- Use fresh Italian seasoning if available, or a mix of dried basil, oregano, and thyme.
- To reduce sodium, use low-sodium tomato sauce and adjust salt accordingly.
