Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup sun-dried tomatoes (oil-packed, chopped)
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream (or half-and-half)
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh basil (for garnish)

Instructions

  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a large skillet over medium-high heat, add olive oil and sear the chicken until golden and cooked through, about 4–5 minutes per side. Remove the chicken and set aside.
  3. In the same skillet, lower heat slightly and add minced garlic and red pepper flakes (if using). Sauté until fragrant, about 30 seconds.
  4. Stir in chopped sun-dried tomatoes and cook briefly to release their flavor.
  5. Pour in chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for a minute.
  6. Add heavy cream and bring the mixture to a gentle simmer.
  7. Whisk in grated Parmesan cheese until the sauce is smooth and thickened to your liking.
  8. Return the chicken to the skillet, spooning sauce over the pieces. Let everything simmer together for a couple of minutes so the chicken absorbs the flavors.
  9. Garnish with fresh basil before serving.
