Ingredients
Chicken:
- 4 boneless, skinless chicken breasts (or thighs)
Seasonings:
- 2 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
Sauce:
- 3 cloves garlic, minced
- ½ cup sun-dried tomatoes (drained and chopped)
- 1 cup heavy cream
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes (optional)
- Fresh basil, chopped (for garnish)
Instructions
- Season chicken: Season chicken with salt, pepper, and paprika.
- Sear chicken: Heat olive oil in a large skillet over medium-high heat. Sear chicken for 4–5 minutes per side until golden brown. Remove and set aside.
- Prepare sauce: In the same skillet, sauté garlic for 1 minute. Add sun-dried tomatoes, chicken broth, heavy cream, Parmesan, Italian seasoning, and red pepper flakes. Stir to combine.
- Simmer: Bring sauce to a gentle simmer. Return chicken to skillet and spoon sauce over top.
- Cook: Reduce heat to low, cover, and simmer for 10–15 minutes until chicken is fully cooked (internal temp 165°F / 74°C).
- Garnish and serve: Garnish with fresh basil and serve over pasta, rice, or mashed potatoes.
Notes
- For extra richness, add a splash of white wine when deglazing the pan.
