Ingredients

Chicken and Sauté

Gnocchi

  • 1 pkg (16 oz) potato gnocchi

Instructions

  1. Cook Gnocchi: Prepare the potato gnocchi according to the package instructions, typically boiling for 2-3 minutes until they float to the surface. Once cooked, drain and set aside while you prepare the sauce and chicken.
  2. Sear Chicken: In a large skillet over medium-high heat, heat 1 tablespoon of olive oil. Add the thinly sliced chicken breasts and sear them until golden brown and cooked through, about 4-5 minutes per side depending on thickness. Remove the chicken from the skillet and set aside on a plate.
  3. Sauté Aromatics: In the same skillet, add the minced garlic and chopped sun-dried tomatoes. Sauté for about 1 minute until fragrant, being careful not to burn the garlic.
  4. Create Sauce: Pour in 1 cup of heavy cream and ½ cup of chicken broth. Stir in ½ cup of grated parmesan cheese. Allow the mixture to simmer gently for about 5-7 minutes, stirring occasionally, until the sauce thickens to a creamy consistency.
