  • ¼ cup pure maple syrup
  • 1 tbsp coconut oil or melted butter
  • 1 tsp cinnamon
  • ¼ tsp salt

  • Pinch of cayenne
  • Vanilla extract
  • Pumpkin spice
  • Flaky sea salt for finishing


Instructions

  1. Preheat Oven: Preheat your oven to 325°F (160°C) and line a baking sheet with parchment paper to prevent sticking and ease cleanup.
  2. Combine Ingredients: In a bowl, mix the 3 cups of raw, unsalted mixed nuts with ¼ cup pure maple syrup, 1 tablespoon coconut oil or melted butter, 1 teaspoon cinnamon, and ¼ teaspoon salt. Stir until all nuts are evenly coated with the maple syrup mixture.
  3. Prepare for Baking: Spread the coated nuts in a single layer on the prepared baking sheet to ensure even roasting and caramelization.
  4. Bake Nuts: Place the baking sheet in the oven and roast the nuts for 18 to 22 minutes. Stir the nuts halfway through the baking time to promote even cooking. The nuts are done when they become fragrant and lightly caramelized.
  5. Cool Down: Remove the baking sheet from the oven and let the nuts cool completely on the sheet. They will crisp up as they cool down.
  6. Store: Once cooled, store the maple roasted nuts in an airtight container. They will keep fresh for up to 2 weeks.
