Ingredients
- 4 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 1/4 cup maple syrup
- 2 tbsp Dijon mustard
- 1 tbsp apple cider vinegar
- 2 garlic cloves, minced
- 1 tsp fresh thyme leaves (or 1/2 tsp dried)
- Salt and freshly ground black pepper, to taste
- 2 large sweet potatoes, peeled and cut into 1-inch cubes
- 1 tbsp olive oil (for sweet potatoes)
- Fresh parsley, chopped (for garnish)
Instructions
-
Preheat the oven to 400°F (200°C).
-
In a small bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, minced garlic, fresh thyme, olive oil, salt, and pepper.
-
Season the chicken thighs with salt and pepper. Place them on a baking sheet or in a large oven-safe dish.
-
Pour half of the maple syrup mixture over the chicken, reserving the other half for later.
-
Toss the sweet potato cubes in 1 tablespoon of olive oil and season with salt and pepper. Arrange them around the chicken on the baking sheet.
-
Roast the chicken and sweet potatoes in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the sweet potatoes are tender.
-
During the last 5 minutes of cooking, brush the remaining maple syrup mixture over the chicken for extra glaze.
-
Remove from the oven and let rest for 5 minutes before serving. Garnish with chopped parsley.
Notes
-
You can also use chicken breasts, but thighs are more flavorful and stay juicier.
-
For extra sweetness, sprinkle the sweet potatoes with a pinch of cinnamon before roasting.
-
If you prefer, you can swap the sweet potatoes with regular potatoes for a different texture.
