Ingredients

  • 4 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 1/4 cup maple syrup
  • 2 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 2 garlic cloves, minced
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried)
  • Salt and freshly ground black pepper, to taste
  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 1 tbsp olive oil (for sweet potatoes)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a small bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, minced garlic, fresh thyme, olive oil, salt, and pepper.

  3. Season the chicken thighs with salt and pepper. Place them on a baking sheet or in a large oven-safe dish.

  4. Pour half of the maple syrup mixture over the chicken, reserving the other half for later.

  5. Toss the sweet potato cubes in 1 tablespoon of olive oil and season with salt and pepper. Arrange them around the chicken on the baking sheet.

  6. Roast the chicken and sweet potatoes in the preheated oven for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the sweet potatoes are tender.

  7. During the last 5 minutes of cooking, brush the remaining maple syrup mixture over the chicken for extra glaze.

  8. Remove from the oven and let rest for 5 minutes before serving. Garnish with chopped parsley.

Notes

  • You can also use chicken breasts, but thighs are more flavorful and stay juicier.

  • For extra sweetness, sprinkle the sweet potatoes with a pinch of cinnamon before roasting.

  • If you prefer, you can swap the sweet potatoes with regular potatoes for a different texture.
