Instructions
-
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
 -
Toss the potato fries in olive oil, paprika, garlic powder, cayenne pepper, onion powder, salt, and black pepper. Spread the fries in a single layer on the baking sheet.
 -
Bake for 30-35 minutes, flipping halfway through, until the fries are golden brown and crispy.
 -
While the fries are baking, prepare the voodoo sauce. In a bowl, mix together mayonnaise, ketchup, Dijon mustard, hot sauce, smoked paprika, cayenne pepper, garlic powder, lemon juice, salt, and pepper. Stir until smooth and creamy.
 -
Once the fries are done, remove them from the oven and transfer them to a serving plate.
 -
Drizzle the voodoo sauce over the fries and top with optional garnishes like chopped green onions, shredded cheddar cheese, crumbled beef, or fresh cilantro.
 - Serve immediately and enjoy!

Notes
-
For extra crispy fries, you can air fry them at 400°F for about 20 minutes, shaking the basket halfway through.
 -
Feel free to adjust the spice level in the voodoo sauce by adding more or less hot sauce and cayenne.
 - These fries are also great as a topping for a loaded potato bowl or served with grilled chicken or shrimp
