Ingredients

Crust:

  • 1 cup all-purpose flour
  • ¼ cup granulated sugar
  • ½ cup butter, melted

Filling:

  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 3 large eggs
  • ½ cup fresh lime juice (about 4-5 limes)
  • 1 tablespoon lime zest

Topping:

  • Powdered sugar, for dusting


Instructions

  1. Preheat oven and prepare pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, ensuring the paper hangs over the sides for easy removal of the bars later.
  2. Make the crust: In a bowl, combine 1 cup flour and ¼ cup sugar. Pour in the melted butter and stir until the mixture is evenly moistened and crumbly. Press this mixture firmly and evenly into the bottom of the prepared pan to form the crust.
  3. Bake the crust: Place the pan in the oven and bake the crust for 15 minutes, or until it’s lightly golden around the edges. Remove from the oven and let it cool slightly while preparing the filling.
  4. Prepare the filling: In a mixing bowl, whisk together 1 cup sugar, 2 tablespoons flour, and 3 eggs until smooth and well combined. Stir in the fresh lime juice and lime zest until fully incorporated.
  5. Pour filling over crust and bake: Pour the lime filling over the warm crust, spreading it evenly. Return the pan to the oven and bake for 20 to 25 minutes, until the filling is set but still slightly jiggly in the center.
  6. Cool and dust with sugar: Remove from the oven and allow the lime bars to cool completely in the pan. Once cool, dust the top generously with powdered sugar. Use the parchment overhang to lift the bars out of the pan before slicing into 9 squares.
