Description

Tender, juicy chicken infused with fresh lemon and rosemary — an easy and aromatic baked chicken recipe perfect for weeknights or dinner parties.

Ingredients

Chicken

  • 4 chicken thighs or breasts

Marinade

  • 2 tbsp olive oil
  • 2 lemons (1 sliced, 1 juiced)
  • 3 garlic cloves, minced
  • 1 tbsp fresh rosemary
  • Salt & pepper to taste

Optional Vegetables

  • Potatoes or carrots for roasting

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it is hot enough to roast the chicken properly.
  2. Prepare Marinade: In a bowl, mix together the lemon juice, olive oil, minced garlic, and fresh rosemary to create a fragrant marinade.
  3. Marinate Chicken: Pour the marinade over the chicken pieces, coating them evenly, then place lemon slices on top of the chicken for added flavor.
  4. Roast the Chicken: Place the chicken in a roasting pan or on a baking sheet and roast in the preheated oven for 35 to 40 minutes, or until the internal temperature reaches 165°F (74°C).
  5. Rest and Serve: Remove the chicken from the oven and let it rest for a few minutes before serving to allow the juices to redistribute. Serve warm with your choice of sides.

Notes

  • Marinate the chicken for up to 24 hours in the refrigerator for deeper, more infused flavors.
  • This dish pairs well with rice, roasted potatoes, or steamed green beans.
  • Using chicken thighs will yield more tender, juicy meat compared to breasts.
